‘Eliodoro’ Tuscan IGT Organic Vermentino 

Experience the essence of Tuscany with our ‘Eliodoro’, Organic Vermentino. This wine boasts a delightful bouquet of quince, apricot, and almond, complemented by a refreshing, well-balanced taste and unique salinity. Perfectly paired with seafood dishes, it embodies the artistry of Tuscan winemaking in every sip.

Grapes: Organic Vermentino

Production Area: Grapes cultivated at Podere Tesoro – Radicondoli (SI).

Soil: Medium texture, predominantly clayey and sandy, with south to southwest exposure, and sub-alkaline pH.

Climate: Thanks to the uplifting sea winds and temperature variations between day and night, we achieve intriguing floral and fruity aromas.

Harvest: Manual harvesting in crates, with meticulous selection of grapes, carried out between the months of September and October to ensure proper ripening and a balanced overall quality.

Winemaking: Soft pressing of whole clusters; initial natural settling of the lees and fermentation at controlled temperatures with daily stirring (bâtonnage) to ensure a good wine structure.

Appearance: Poured into the glass, it shines in its straw-yellow color, speckled with slight hints of greenish and golden reflections.

Smell: On the nose, it releases a bouquet of white-fleshed fruits such as quince, apricot, almond, grass, and wildflowers.

Taste: On the palate, the wine is very fresh, displaying good balance due to its unique salinity.

Pairings: Its delicate, fresh, and aromatic taste makes it particularly suitable for mildly seasoned seafood dishes. It pairs well with seafood appetizers and first courses, shellfish, crustaceans, and, in general, fish-based main dishes (baked or boiled).
