Organic Vermentino
Sun-kissed and refreshing, Eliodoro is an organic Vermentino crafted with clarity and elegance.
Its delicate, fresh, and aromatic taste makes it particularly suitable for not overly elaborate seafood dishes. It pairs well with appetizers, seafood starters, shellfish, and, in general, fish-based main courses (baked or boiled).
We recommend trying it also with fresh cheeses and white meats.
Eliodoro presents a bright straw-yellow colour with subtle green reflections. On the nose, it offers layered aromas of quince, apricot, almond, wildflowers, and fresh grassy notes. The palate is crisp and refreshing, balanced by a gentle natural salinity that adds depth and definition. Its smooth structure and lively acidity create a refined, harmonious finish.
Serving Suggestions –
Eliodoro’s delicate, fresh, and aromatic profile makes it a perfect match for subtly seasoned seafood dishes. It pairs effortlessly with seafood appetisers, light first courses, shellfish, crustaceans, and refined fish-based mains, whether baked or gently boiled. Its balanced character also complements fresh cheeses and tender white meats. For optimum expression of its brightness and coastal salinity, serve well-chilled at 8–10°C.
Vineyard & Terrior
Grapes: Organic Vermentino.
Production Area: Grapes cultivated at Podere Tesoro – Radicondoli (SI).
Soil: Medium texture, predominantly clayey and sandy, with south to southwest exposure, and sub-alkaline pH.
Climate & Harvest
Climate: Uplifting sea winds and natural day–night temperature variations help develop expressive floral and fruity aromas.
Harvest: Hand-harvested in crates with meticulous selection, carried out between September and October to ensure optimal ripeness and balance.
Winemaking
Vinification: Soft pressing of whole clusters, followed by natural settling of the lees. Fermentation takes place at controlled temperatures with daily bâtonnage (lees stirring) to build texture and structure.
